Valentine's Day



Happy Valentine’s Day!



Since today is a school day the kids got to choose a special breakfast yesterday in honor of  Love Day.  They chose Pecan Pannycakes, with sausage and Canadian bacon.  Pecan Pannycakes are my secret (breakfast) weapon, and I've never served them to someone who didn't love them.  Today, I'll share the recipe...





Mmmmmm...

Tami’s Easy Peasy Pecan Pannycakes
1 1/2 cups flour
2 1/2 tbs sugar
1 1/2 tsp baking powder
1/2 tsp salt (popcorn salt if you have it)

1 1/2 cups milk
2 eggs
1/2 tsp pure vanilla


3 tbs melted butter


Heat the pan or griddle to 375 degrees.  Mix the dry ingredients, then add milk, eggs and vanilla, in order.  Whisk them together (they should blend quickly).  Let this mixture rest for 3-5 minutes, then add melted butter and pecans.
Using a 1/4 cup ladle, 8 pancakes fit on my trusty griddle at a time.  I bet we use this thing 3-4 times a week.  It and our steamer seem to rarely make it back into the appliance pantry.  :)


For the 5 of us, I multiply the recipe by 1 1/2; it makes just enough to allow for a small snack when lunch is expected, as we always seem to make pancakes a "brunch", and the kids do NOT understand skipping a meal!  Good eaters, all of them!




Give these a try, folks.  The nuts make them just a bit more substantial, and a little special.  If you're trying to eat "better", you can substitute half of the flour with whole wheat, and I personally think the sugar isn't necessary at all if you top with syrup or honey.  I am trying to cut back on sweets, but am not avoiding fats, so the doctor actually recommended buttering the cakes to limit syrup absorption.
